We learned about good practices in the production of food products with European protection in Southern Italy. The hosts introduced us to an organic farm where mozzarella is made by hand from buffalo milk. We met a cooperative that unites farmers who still grow real San Marzano tomatoes by hand. We have tried dried products from the native breed of pigs "Black Pig of Calabria";, which are bred outdoors, in the wild and tasted the region's top wines.
